Homemade Chili Sauce

Making chili sauce at home from fresh chilis is a straightforward process. Here’s a basic recipe you can follow:

### Ingredients:
- **Fresh red chilis** (about 250 grams)
- **Garlic** (4-5 cloves)
- **White vinegar** (1/2 cup)
- **Sugar** (2 tablespoons)
- **Salt** (to taste)
- **Water** (1/4 cup)

### Instructions:

1. **Prepare the Chilis:**
   - Wash the chilis thoroughly.
   - Remove the stems and, if you want a milder sauce, you can also remove the seeds. However, leaving the seeds will result in a hotter sauce.

2. **Blend the Ingredients:**
   - In a blender or food processor, add the chilis, garlic, vinegar, sugar, and salt.
   - Add the water to help with the blending process.
   - Blend the mixture until it reaches your desired consistency. If you like it smooth, blend longer; for a chunkier sauce, blend for a shorter time.

3. **Cook the Sauce:**
   - Pour the blended mixture into a saucepan.
   - Bring the sauce to a boil over medium heat.
   - Once it boils, reduce the heat to low and let it simmer for about 10-15 minutes. Stir occasionally to prevent sticking.
   - Taste the sauce and adjust the seasoning (salt, sugar) if needed.

4. **Cool and Store:**
   - Let the sauce cool down completely.
   - Transfer it to a sterilized glass jar or bottle.
   - Store the chili sauce in the refrigerator. It can last for several weeks.

### Tips:
- **Spiciness Control:** If the sauce is too spicy, you can add more vinegar or sugar to balance the heat.
- **Adding Flavors:** Feel free to add other flavors like ginger, lime juice, or a splash of soy sauce for variation.
- **Thickness:** If the sauce is too thick, add a bit more water or vinegar. If it's too thin, simmer it longer to reduce.

Enjoy your homemade chili sauce with your favorite dishes!
